Food and Beverage Manager

JOB DESCRIPTION

 

Position Summary

The Food and Beverage Manager is responsible for the overall operations of all food and beverage on the cruise ship.  Manages the departments Galley, Restaurant, Bars, Provision and Controlling to effectively, enforce company standards, maintain food cost, improve and maintain sales and maintain USPH standards and eliminate complaints. To maximize the efficiency of food & beverage operations staff through effective planning scheduling, communication, and training. 

 

Essential Duties and Responsibilities

  • Responsible for the standards of service delivered to the passengers in the bars, dining rooms, buffets and all other food & beverage outlets by F&B employees

  • Supports and monitors the performance of the subordinate management level positions within the department 

  • Closely monitors all financial transactions and the overall budget of the Food & Beverage department - food cost, bars revenue, personnel overtime to ensure expense reduction and that expenditures stay within the budget limits 

  • Works in close cooperation with ship's Safety Officer and the Staff Captain to ensure that all safety standards and regulations are met according to the cruise lines rules and international standards 

  • Ensures that proper on-the-job training is provided to all staff on all levels in all areas within the Food and Beverage department 

  • Performs general supervision and quality control of all Food and Beverage products and services offered on the cruise ship making sure the highest standards of the cruise line are met and the department exceeds passenger ‘s expectations 

  • Develop and maintain customer service standards so ensuring that the highest standards of service are achieved. Promote a truly customer focused working environment

  • The Food and Beverage Manager ensures that procedures for sanitation and cleanliness are met at all times, enforces and follows cleaning procedures for work surfaces and all related equipment 

  • Oversees the overall operation of the storerooms as per company’s instruction, including but not limited to rotation, preparation, distribution and bookkeeping

  • Participates in the daily preparation of mealtimes scheduled of all F&B areas collaboration with the Cruise Director in Accordance with the company's instructions

  • Responsible for the overall implements, consumptions of all F&B policies and procedures pertain to employees, work manuals, sanitation requirements, consumptions, costs, qualities, menus, special parties and others

  • Reviews and preparing performance evaluations of all department heads as well as approving all evaluations submitted by department heads for F&B employees as per company's instructions. 

  • In coordination with the Beverage Operations manager, Executive Chef, and Senior Maitre plan all special events and functions maximize guest satisfaction.  

  • Address any performance and competency issues relating to staff and follow appropriate disciplinary procedures through to authorized levels. 

  • Overall responsibility for accuracy and compliance pertaining to the department’s administration. Ensure that all paperwork assigned to this position is completed and submitted in a timely manner 

  • Ensure that personnel follow all the guidelines and procedures regarding Occupational Health & Safety (OH&S) Policy and Procedures at all times 

Required Qualifications and Skills

  • Diploma or Degree in Hospitality, Hotel management, or related field or technical training and relevant industry experience 

  • Minimum 5 years of Management experience in the Food Operations Department of a cruise ship, resort, or full-service hotel 

  • Cruise ship experience is preferred. 

  • Proven and effective experience of managing in a commercial catering operation  

  • Effective financial management and budget controls  

  • Effective leadership, communication, decision making, coaching, delegation and motivation skills. 

  • Strong managerial skills and ability to work in a multicultural environment. 

  • Excellent command of the English language required. 

  • Working knowledge of various computer software programs (MS Office, restaurant management software, POS) 

  • Up to date with food and beverages trends and best practices 

  • Guest-oriented and service-minded 

  • Demonstrate ability to embrace change and build effective teamwork  

  • Ambitious and flexible with the ability to set clear and achievable goals  

  • Excellent organizational skills and the ability to handle a varied and demanding workload
