JOB DESCRIPTION
Position Summary
Manages daily restaurant operations and assists with menu planning, maintains sanitation standards and assists servers and hosts on the floor during peak meal periods. Oversees and manages the performance of all food & beverage venues. Acting as the conductor, they will ensure a smooth and seamless food & beverage operation while creating memorable moments for the guests. Strives to continually improve guest and employee satisfaction and maximize financial performance in areas of responsibility.
Reports to the ship's Food and Beverage Manager
Essential Duties and Responsibilities

Setting up written duty rosters for service staff in the restaurants

Organizing, managing and motivating all service staff in the restaurants

Implementing and maintaining the company standards in the restaurants

Ordering supplies in cooperation with the Ship Manager

Checking and overseeing the loading and organization of all relevant supplies

Properly storing of all restaurant supplies and equipment
-
Correctly handling all food stock, as well as all the equipment in the restaurants

Maintaining impeccable cleanliness, hygiene and tidiness in the restaurants

Hands-on execution of the day-to-day operations of the Restaurant and Bar venues

Performing cost controlling and maintaining budgets in the restaurant department

Maintaining an active presence at official occasions and events

Taking monthly stock, as per company’s instructions

Liaise with the Sommelier to ensure that all revenue wine lists are correctly updated, and all service staff understand and practice policies related to revenue wine service.

Implementing correct appearance/uniformity, as well as standards of personal hygiene of all service staff

Organizing, supervising and providing active support of all food & beverage activities

Ensures that a full inventory and consumption record is maintained for all supplies and equipment assigned to the restaurants aboard the cruise ship

Maintaining an active presence at official occasions and events

Responsible for assigning work and vacation schedules to ship restaurant personnel and also for overseeing on-the-job training covering all aspects of service, menu education and etiquette

Any other job duties as assigned
Required Qualifications and Skills

Formal hospitality training - a diploma from a recognized hotel school or university or international equivalent is preferred

Minimum three to four years hospitality management experience including front of house and back of house operations. Cruise ship experience preferred

Valid Standards of Training, Certification and Watchkeeping for Seafarers (STCW) and flag certification for the duration of the contract and appropriate to position

WSET Level 2, Court of Master Sommeliers Introductory or equivalent certification in beverage knowledge

Previous Maître d’ or Restaurant Manager experience in a five-star restaurant or onboard a luxury cruise restaurant environment

Superior knowledge and experience in Public Health rules and regulations related to USPH and HACCP

Excellent working knowledge of food, beverage (wine, beers, spirits, cocktails, coffee, tea) and international cuisine

Strong managerial skills and ability to work in a multicultural environment

Communicate effectively with both guests and staff
